Our tasty and easy pumpkin soup recipe features this super squash as the main ingredient.

INGREDIENTS2 yellow onions, chopped3 garlic cloves, chopped1 tbsp avocado oil2 cups chicken (or vegetable) broth2¼ cups pumpkin puree½ cup coconut milk1 tsp salt¼ tsp pumpkin pie spiceblack pepper, to taste
Add onions, oil and garlic to sauce pot and cook on medium heat until translucent. Add remaining ingredients and bring to a boil, then reduce heat to low and simmer 15 to 20 minutes. Remove from heat and use immersion blender to blend until smooth. Serve immediately.
